Geographically Appropriate Baking

A reader wrote a strongly worded letter of complaint over our slipshod approach to cultural heritage when we claimed Scottish shortbread as our own a few months ago. For the record, Susannah is 6.25% Scottish. Here she is making the Yorkshire delicacy Parkin. Sadly, this baked good falls a little to the south of Susannah's ancestral home. One day I hope to dine with her at Alnwick castle. Auntie Madge would spin in her grave to know it is now a green foodie destination.
